These carrot banana paleo muffins are amazing. No refined sugar or white flour, and they taste.....perfect. So simple to make, and a great snack or breakfast. I like to make an entire batch, and freeze half so that I can have them the next week. If you wanted to make them into cupcakes you could frost them with coconut icing...... the recipe can be found here: http://www.elanaspantry.com/carrot-banana-muffins/ A tip for making muffins: After you spoon the batter into the muffin tin, pick up the muffin tin and gently drop it onto the counter a few times (I put down a towel first) all of the batter will settle into the cups more neatly, and the air pockets will disappear making for neater, more evenly baked muffins. xo, Megan
